With a creamy peanut butter dipping sauce
This fresh & easy meal (or snack) is perfect for the warmer days ahead!
Not only are these rolls beautiful, but they’re also nourishing + so fun to make! I will be honest though, I’m still working on my rolling technique… they tend to look a liiiitle rough on the edges.
Though this is a relatively ‘light’ meal, the FAT [from the peanut butter], FIBER [from the veggies] & PROTEIN [from the tofu] will help to keep you full & satisfied. You can always add more protein on the side, or use these rolls as a side for another dish.
This recipe is gluten-free, dairy-free + and plant-based. Here are a few other switches you can make to best suit you:
Peanut free option: switch out the peanut butter for tahini (or another nut/seed butter).
Gluten-free option: use a gluten-free soy sauce or coconut aminos.
Soy-free option: use coconut aminos and switch out the tofu for shrimp, fish, or chicken.a) blood sugar roller coasters (think irritability, low energy, poor focus, sugar cravings)
Instructions
Take make ~6 rolls [adjust the recipe as needed or make extras for next-day leftovers!]
- 6 sheets of rice paper wraps
- ~ ¼ package of rice vermicelli
- ½ package of extra-firm, organic tofu
- A chunk of purple cabbage
- ½ a red pepper
- 1 large carrot
- ½ a cucumber
- Olive oil, garlic powder, salt + pepper
- Other veggies/herbs you can use: lettuce, sprouts, sweet potato, basil, cilantro, and avocado.
For the creamy peanut butter sauce [again, adjust the ingredients as needed!]:
- 2 heaping tbsp natural peanut butter
- 2 tbsp soy sauce or coconut aminos
- 1-2 tsp maple syrup, to taste
- Garlic powder
- Hot water to make your desired consistency
Instructions
- VEGGIES: Thinly slice the cucumber, red pepper, and purple cabbage, & grate the carrot. Alternatively, you can use a mandoline if you have one!
- TOFU: Cut the tofu into thin rectangles. Heat up a frying pan with a splash of olive or avocado oil. Add the tofu, and gently fry with garlic powder, salt + pepper. Cook vermicelli while doing this.
- RICE VERMICELLI: Cook the rice noodles as indicated on the package. They are super quick!
- PEANUT SAUCE: Use a fork to whip up the peanut butter + soy sauce until smooth and creamy. Add maple syrup to your desired sweetness, start with 1 tsp. Then, add hot water to thin it out.
- RICE PAPER ROLLS: Boil water and pour a thin layer into a frying pan. Place rice paper into hot water + let sit for a few seconds until soft. Place soft rice paper onto a plate, fill with raw veggies, crispy tofu + rice noodles, then roll up!
